A fresh, crunchy twist on the classic Italian side, this cucumber caprese salad features English cucumbers, sweet cherry tomatoes, and mozzarella pearls tossed in a light balsamic vinaigrette. It is the perfect simple side dish for BBQs, potlucks, and summer dinners.

  • 1 large English cucumber, chopped into chunks No need to peel
  • 2 cups cherry or grape tomatoes, halved Use sweet, firm tomatoes

  • 3 tablespoon extra virgin olive oil High quality for best flavor

Method
 

  1. Wash the cucumber and tomatoes thoroughly and pat them completely dry with paper towels.
  2. Chop the cucumber into bite-sized chunks and slice the tomatoes in half lengthwise.

  3. Whisk the olive oil, balsamic vinegar, oregano, salt, and pepper in a small bowl until emulsified.
  4. Combine cucumbers, tomatoes, and mozzarella pearls in a large bowl and toss with the dressing.
