Ingredients
  

  • 1.5 lbs ground beef (80/20 blend) Kept very cold
  • 8 slices thick-cut bacon Cooked until crispy
  • 4 brioche buns Lightly toasted
  • 4 slices sharp cheddar cheese From a block
  • 1 teaspoon kosher salt For seasoning
  • 1 teaspoon black pepper Freshly ground
  • 4 leaves green lettuce Washed and dried
  • 1 large tomato Sliced thick

Equipment

  • 1 Cast iron skillet For best crust
  • 1 Spatula For flipping

Method
 

  1. Place bacon strips in a cold cast-iron skillet over medium heat and cook until crispy, then remove to a paper towel.

  2. Divide the cold ground beef into four equal portions, shape into loose rounds, and press a dimple into the center of each.

  3. Season the beef generously with salt and pepper, then sear in the hot skillet for three minutes undisturbed.
  4. Flip the burgers, immediately top with cheddar cheese, cover the pan to melt the cheese, and cook for two more minutes.

  5. Assemble the burgers by placing the lettuce, tomato, glazed patty, and crispy bacon onto the toasted buns.

Notes

Keep your ground beef very cold until right before cooking. Do not press the patties while they sear to keep the juices locked inside.
