Ingredients
  

  • 2 ½ cups cake flour Spoon and leveled
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter Softened to room temperature
  • 4 large eggs Room temperature
  • 1 cup buttermilk Room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 8 ounces mascarpone cheese Cold
  • 8 ounces cream cheese Softened
  • 2 cups heavy whipping cream Very cold
  • 1 ½ cups powdered sugar Sifted
  • 3 cups mixed fresh berries Washed and thoroughly dried

  • 1 stand mixer For batter and frosting
  • 3 8-inch cake pans For baking layers
  • 1 Offset spatula For spreading frosting

Method
 

  1. Preheat oven to 350°F and prepare three 8-inch round cake pans.
  2. Whisk the cake flour, baking powder, baking soda, and salt together in a bowl.

  3. Beat the softened butter and sugar until pale and fluffy.

  4. Add eggs one at a time, followed by the vanilla and almond extracts.
  5. Alternate adding the dry mixture and buttermilk, mixing just until combined.
  6. Bake layers for 30-35 minutes until a toothpick comes out clean.
  7. Beat mascarpone, cream cheese, and powdered sugar, then stream in cold cream until stiff peaks form.

  8. Layer the cake with frosting and fresh berries, then frost the outside and chill before serving.

Notes
