- Heat olive oil in a large skillet over medium high heat until shimmering.
- Add diced onion and bell pepper to the skillet and cook for 4 to 5 minutes until softened and starting to brown.
- Add minced garlic and cook for 1 minute while stirring constantly until fragrant.
- Add ground chicken to the skillet, break into small crumbles with a wooden spoon, and cook for 6 to 8 minutes until no pink remains.
- Season the chicken with Cajun seasoning, salt, and pepper while it cooks, stirring to distribute spices evenly.
- Add tomato sauce, ketchup, Worcestershire sauce, and brown sugar to the skillet and stir until everything is well combined.
- Bring mixture to a simmer, then reduce heat to medium low and cook uncovered for 10 to 15 minutes, stirring occasionally, until sauce thickens and reduces.
- While sauce simmers, split hamburger buns and toast them in a separate pan or under the broiler until lightly golden.
- Taste the Cajun chicken mixture and adjust seasoning with more salt, pepper, or Cajun seasoning if needed.
- Spoon the Cajun chicken mixture generously onto the bottom half of each toasted bun and top with shredded cheese if desired.
- Add top bun and serve immediately while hot with plenty of napkins.

Notes
The secret to great sloppy joes is letting the sauce simmer until thick. I rushed this step my first time and the filling was too watery and slid off the buns. Let it simmer for 10 to 15 minutes uncovered and you'll get that perfect consistency that actually stays together.
