  • 4 boneless skinless chicken breasts Thick pieces work best
  • ¼ cup basil pesto Store-bought or homemade
  • 8 slices fresh mozzarella cheese Patted dry
  • 2 medium tomatoes Sliced into thick rounds
  • 1 tablespoon olive oil For searing
  • 1 teaspoon salt For seasoning
  • ½ teaspoon black pepper For seasoning
  • 1 teaspoon Italian seasoning For seasoning
  • 2 tablespoon balsamic glaze For garnish

Method
 

  1. Place the chicken flat on a cutting board and slice horizontally to create a deep pocket, stopping before cutting all the way through.
  2. Rub the outside of the chicken evenly with olive oil, salt, black pepper, and Italian seasoning.

  3. Spread pesto inside the pocket, layer in the mozzarella and tomato slices, and secure the edges with a wooden toothpick.

  4. Heat an oven-safe skillet over medium-high heat and sear the chicken for four minutes per side until golden brown.

  5. Transfer the skillet to a preheated 375-degree oven and bake until the internal temperature reaches 165 degrees Fahrenheit.
  6. Remove the toothpicks, drizzle with balsamic glaze, and let rest for five minutes before serving.

Notes

Do not cut all the way through the chicken breast; leave a hinge to keep the filling secure. Soaking toothpicks in water prevents them from burning in the oven.
