- Preheat oven to 425°F and spread frozen tater tots in a single layer on a baking sheet. Bake for 20-25 minutes until golden brown and crispy, flipping halfway through for even browning.
- While tater tots bake, brown ground beef in a large skillet over medium-high heat until no pink remains. Drain excess grease, then add taco seasoning and a splash of water, stirring until evenly coated.
- Heat flour tortillas in a dry skillet over medium heat for about 30 seconds per side until warm and pliable, or wrap in damp paper towels and microwave for 20 seconds.
- Lay warm tortilla flat and spread nacho cheese sauce down the center. Add seasoned ground beef, crispy tater tots, shredded cheddar cheese, and a dollop of sour cream. Keep fillings centered with 2 inches space on sides.
- Fold sides in toward center, then fold bottom up over fillings and roll tightly away from you, tucking as you go. Cut in half diagonally and serve immediately with extra nacho cheese sauce for dipping.

Notes
Bake tater tots until crispy or the burritos will be mushy with no texture contrast. Don't overfill the tortillas or they won't close properly. Warm tortillas before assembling to prevent tearing. The tater tots will soften slightly in leftovers but still taste good reheated in the oven.
