Ingredients
  

  • 1 tablespoon unsalted butter Softened, for greasing the dish
  • 3 cups fresh sweet cherries Pitted and stems removed
  • 3 large eggs Room temperature
  • ½ cup granulated sugar Plus extra for the pan if desired
  • ½ cup whole milk Room temperature
  • ½ cup heavy cream Room temperature
  • ½ cup all-purpose flour Spoon and leveled
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract Optional but recommended
  • ¼ teaspoon salt
  • 1 tablespoon powdered sugar For garnish

Equipment

  • 1 9-inch baking dish Ceramic or glass works best
  • 1 Blender For mixing the batter
  • 1 cherry pitter Highly recommended for fast prep

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit and generously grease a 9-inch baking dish with softened butter.

  2. Arrange the pitted cherries in an even layer across the bottom of the prepared baking dish.
  3. Combine eggs, sugar, milk, cream, flour, vanilla extract, almond extract, and salt in a blender.

  4. Blend on medium speed for 30 seconds until the batter is completely smooth and frothy.
  5. Pour the blended batter directly over the cherries in the baking dish.

  6. Bake for 40 to 45 minutes until the edges are golden and puffed, and the center is just set.
  7. Cool for 15 minutes before dusting with powdered sugar and serving.
