Soft blonde cookie bars with cinnamon sugar swirl and vanilla glaze. Easy no-yeast recipe that tastes like cinnamon rolls in bar form.

Ingredients
  

  • 0.5 cup unsalted butter Melted, for bars
  • 1 cup packed brown sugar For bar base
  • 2 large eggs Room temperature
  • 2 teaspoons vanilla extract For flavor
  • 1.5 cups all purpose flour Spooned and leveled
  • 1 teaspoon baking powder For leavening
  • 0.25 teaspoon salt For flavor
  • 0.5 cup packed brown sugar For cinnamon swirl
  • 2 tablespoons ground cinnamon For swirl filling
  • 3 tablespoons butter Melted, for swirl
  • 1.5 cups powdered sugar Sifted
  • 3 tablespoons milk or heavy cream For glaze
  • 0.5 teaspoon vanilla extract For glaze

Equipment

  • 1 9×13 inch baking pan For baking bars

Method
 

  1. Preheat oven to 350°F and line a 9x13 inch baking pan with parchment paper, then grease lightly.
  2. Melt butter and stir in brown sugar until smooth, let cool slightly, then whisk in eggs and vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt, then fold the dry ingredients into the wet ingredients until just combined.
  4. Spread about two thirds of the batter evenly into the prepared baking pan.
  5. In a small bowl, mix brown sugar, cinnamon, and melted butter until it forms a thick paste, then drop spoonfuls over the batter and swirl with a butter knife.
  6. Drop remaining batter by spoonfuls over the cinnamon layer and gently spread to cover most of the surface.
  7. Bake for 22 to 25 minutes until edges are golden and a toothpick inserted in the center comes out with just a few moist crumbs.
  8. While bars cool, whisk together powdered sugar, milk, and vanilla extract until smooth and pourable.
  9. Let bars cool for 15 minutes, then drizzle glaze generously over the top while still slightly warm.

  10. Let cool completely, then cut into squares and serve.

Notes

The key is swirling the cinnamon filling instead of mixing it in completely. I stirred it throughout my first time and lost the pretty swirl pattern. Drop spoonfuls and swirl with a knife for those beautiful ribbons.
