Ingredients
  

  • 1 pound ground beef (80/20 blend) Keep cold until ready to form patties
  • 4 brioche buns Halved for toasting
  • 4 slices cheddar cheese Medium or sharp cheddar
  • 1 large yellow onion, thinly sliced For caramelizing
  • 2 tablespoons unsalted butter Divided use for onions and buns
  • 4 leaves romaine lettuce Washed and dried well
  • 4 slices beefsteak tomato Patted dry
  • ¼ cup mayonnaise Base for the special sauce
  • 2 tablespoons ketchup For the special sauce
  • 1 tablespoon sweet pickle relish For the special sauce

  • 1 Cast iron skillet Essential for a good crust
  • 1 metal spatula For flipping patties securely

Method
 

  1. Melt one tablespoon of butter in a skillet over medium heat and cook the sliced onions slowly until they are deeply browned and sweet.

  2. Whisk the mayonnaise, ketchup, and sweet pickle relish together in a small bowl until completely smooth, then refrigerate.
  3. Spread the remaining butter on the cut sides of the brioche buns and toast them in a hot pan until golden brown and crispy.

  4. Divide the ground beef into four equal portions and gently shape them into patties, pressing a shallow dimple into the center of each.
  5. Season the patties generously with salt and sear them in a smoking hot cast iron skillet for three to four minutes per side until a dark crust forms.
  6. Place a slice of cheddar cheese on each hot patty during the last minute of cooking, cover the pan briefly to melt it, then let the meat rest for two minutes.

  7. Spread the prepared sauce on the toasted bottom buns, layer with lettuce and tomato, add the rested cheese patty, top with caramelized onions, and finish with the top bun.

Notes

Do not press down on the patties while they cook in the skillet; this keeps all the delicious juices trapped inside the meat.
