Ingredients
  

  • 2 cups cooked chicken, shredded or cubed Rotisserie works best
  • 2 large ripe avocados Pitted and peeled
  • ¼ cup red onion, finely diced Soak in water to reduce bite
  • 1 tablespoon fresh lime juice Plus more to taste
  • 2 tablespoons fresh cilantro, chopped Use parsley if preferred
  • ½ teaspoon salt Adjust to taste
  • ¼ teaspoon black pepper Freshly cracked

Method
 

  1. Scoop the avocados into a large bowl and add the lime juice immediately.
  2. Mash the avocados with a fork until creamy but still slightly chunky.
