Ingredients
  

  • 1 lb boneless skinless chicken thighs, cut into 2-inch pieces Or breasts if preferred
  • 1 cup buttermilk For tenderizing
  • 1 cup cornstarch For crispy coating
  • 1 teaspoon garlic powder Seasoning
  • ½ teaspoon onion powder Seasoning
  • ½ cup mayonnaise Sauce base
  • ¼ cup sweet Thai chili sauce Sweetness and tang
  • 1 tablespoon Sriracha Adjust for heat
  • 1 teaspoon honey Optional for extra sweetness
  • 8 brioche slider buns Lightly toasted
  • 2 tablespoon green onions, sliced For garnish
  • Vegetable oil For frying

Method
 

  1. Whisk buttermilk, salt, and pepper in a bowl, then add chicken pieces to soak for 15 minutes.

  2. Mix cornstarch, garlic powder, and onion powder in a shallow dish.
  3. Remove chicken from buttermilk and press firmly into the cornstarch mixture to coat.

  4. Fry chicken in 350°F oil for 4–5 minutes until golden brown and crispy.
  5. Whisk mayonnaise, sweet chili sauce, Sriracha, and honey in a large bowl.
  6. Toss the hot fried chicken in the sauce until evenly coated.
  7. Place chicken on buns, top with green onions and sesame seeds, and serve.

Notes
