  • 1 cup Oaxaca cheese Freshly grated
  • ½ cup sharp cheddar cheese Freshly grated for tangy flavor

Method
 

  1. Set a large nonstick or cast iron pan over medium heat until hot to the touch.
  2. Place one flour tortilla flat and sprinkle the cheese evenly over one half, then fold the empty side over.
