- Line an 8x8 inch pan with parchment paper, leaving extra edges for easy removal later. Lightly grease the parchment to prevent sticking and ensure clean bars.
- Melt the chocolate and coconut oil using a double boiler. Heat water until simmering, place chocolate and oil in a bowl above the water, and stir constantly until smooth and glossy. Pour half of the melted mixture into the prepared pan and spread evenly with an offset spatula.
- Mix chopped pistachios, dates, tahini, cardamom, and salt until you get a chunky but sticky mixture that holds together without becoming paste-like.
- Spread the filling evenly over the chocolate base, leaving a small border around the edges. Pour the remaining chocolate over the filling and gently spread it without disturbing the layer underneath.
- Refrigerate the assembled bar for 2–3 hours until completely firm. Use a sharp knife warmed under hot water to slice the bars cleanly without cracking.
