  • 1 Double boiler or microwave-safe bowl To melt chocolate smoothly
  • 1 Mixing Bowl To mix pistachio-date filling
  • 1 Spatula To layer and smooth each chocolate layer
  • 1 Refrigerator To chill and set the bars completely

Ingredients

  • 1 cup Medjool dates pitted
  • 1 cup Pistachios shelled,unsalted
  • 3 tablespoons Pure maple syrup adjust to taste
  • ¼ teaspoon Cardamom ground optional, for Middle Eastern flavor
  • ½ teaspoon Vanilla extract
  • 1 pinch Salt
  • 1 ½ cups Dark chocolate chips or chopped chocolate bar
  • 2 tablespoons Coconut oil
  • ¼ cup Crushed pistachios for topping
  • ½ teaspoon Sea salt flakes optional, for garnish

Instructions

  • Line an 8x8 inch pan with parchment paper, leaving extra edges for easy removal later. Lightly grease the parchment to prevent sticking and ensure clean bars.
    prep your molds
  • Melt the chocolate and coconut oil using a double boiler. Heat water until simmering, place chocolate and oil in a bowl above the water, and stir constantly until smooth and glossy. Pour half of the melted mixture into the prepared pan and spread evenly with an offset spatula.
    make the chocolate base
  • Mix chopped pistachios, dates, tahini, cardamom, and salt until you get a chunky but sticky mixture that holds together without becoming paste-like.
    prepare the filling
  • Spread the filling evenly over the chocolate base, leaving a small border around the edges. Pour the remaining chocolate over the filling and gently spread it without disturbing the layer underneath.
    layer and assemble
  • Refrigerate the assembled bar for 2–3 hours until completely firm. Use a sharp knife warmed under hot water to slice the bars cleanly without cracking.
    chill and finish
