A fresh, easy California Roll made with crisp cucumber, creamy avocado, and sweet imitation crab wrapped in perfectly seasoned sushi rice. Ready in under an hour for a fun homemade sushi night.

Ingredients
  

  • 2 cups short-grain sushi rice Rinsed until water runs clear
  • ¼ cup sushi vinegar Or mix rice vinegar, sugar, and salt
  • 4 sheets nori (seaweed) Cut in half horizontally
  • 8 oz imitation crab meat Flaked or cut into thin sticks
  • 1 ripe avocado Pitted, peeled, and sliced thinly
  • ½ English cucumber Cut into thin matchsticks
  • 2 tablespoon toasted sesame seeds Black and white mixed

Equipment

  • 1 bamboo sushi mat Wrapped tightly in plastic wrap
  • 1 Sharp knife For clean slices
  • 1 rice cooker For perfect rice

Method
 

  1. Cook the rinsed sushi rice and gently fold in the sushi vinegar while warm.
  2. Slice the cucumber and avocado into thin strips and flake the crab meat.
  3. Spread a thin, even layer of rice over a half sheet of nori and sprinkle with sesame seeds.
  4. Flip the nori over and arrange the crab, avocado, and cucumber across the bottom third.
  5. Roll tightly using a plastic-wrapped bamboo mat and slice into 8 pieces with a wet knife.

Notes
