Ingredients
  

  • 1 cup graham cracker crumbs Finely crushed
  • 3 tablespoons unsalted butter Melted
  • 16 ounces full-fat cream cheese Softened to room temperature
  • ½ cup granulated sugar Plus 1 tablespoon for the crust
  • 2 large eggs Room temperature
  • ¼ cup sour cream Room temperature
  • 1 teaspoon vanilla extract Pure vanilla is best

Method
 

  1. Combine the graham cracker crumbs, melted butter, and one tablespoon of sugar in a bowl.
  2. Press the crumb mixture firmly into the bottom of a paper-lined 12-cup muffin tin.

  3. Beat the softened cream cheese and remaining sugar until completely smooth.

  4. Mix in the sour cream and vanilla extract just until combined.

  5. Add the eggs one at a time on low speed, mixing just until the yellow disappears.
  6. Divide the batter over the crusts and bake at 325 degrees Fahrenheit for 18 to 20 minutes.
