- Combine the graham cracker crumbs, melted butter, and one tablespoon of sugar in a bowl.
- Press the crumb mixture firmly into the bottom of a paper-lined 12-cup muffin tin.
- Beat the softened cream cheese and remaining sugar until completely smooth.
- Mix in the sour cream and vanilla extract just until combined.
- Add the eggs one at a time on low speed, mixing just until the yellow disappears.
- Divide the batter over the crusts and bake at 325 degrees Fahrenheit for 18 to 20 minutes.
