  • 1 prepared pie dough Store-bought or homemade, kept very cold
  • 3 cups fresh cherries Pitted and halved
  • cup granulated sugar Plus more for dusting
  • 2 tablespoons cornstarch Crucial for thickening the juices
  • 1 tablespoon lemon juice Freshly squeezed
  • 1 large egg Beaten, for egg wash
  • 1 tablespoon powdered sugar Optional, for dusting before serving

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Roll the cold pie dough into a rough 12-inch circle on the parchment paper.

  3. Combine the pitted cherries, granulated sugar, cornstarch, and lemon juice in a large bowl.

  4. Spoon the fruit mixture into the center of the dough, leaving a 2-inch border all around.

  5. Fold the dough edges up and over the filling, overlapping the pleats as you go.
  6. Brush the exposed pastry edges lightly with the beaten egg wash.
  7. Bake for 35 to 40 minutes until the crust is deeply golden and juices are bubbling.
  8. Allow the galette to cool on the baking sheet before dusting with powdered sugar and slicing.
