Ingredients
  

  • 1 pound boneless skinless chicken breasts, diced Chop into very small pieces
  • 2 tablespoons taco seasoning Store-bought or homemade
  • 1 tablespoon olive oil For searing the meat
  • 4 large flour tortillas Eight-inch size works best
  • 2 cups Mexican cheese blend, freshly grated Avoid pre-shredded bags

Method
 

  1. Toss the diced chicken with taco seasoning and olive oil until evenly coated.
  2. Cook the seasoned chicken in a large skillet over medium-high heat until opaque and browned.
