- Toss the diced chicken with taco seasoning and olive oil until evenly coated.
- Cook the seasoned chicken in a large skillet over medium-high heat until opaque and browned.
- Wipe the skillet clean and place a flour tortilla flat in the pan over medium-low heat.
- Add a generous layer of grated cheese and cooked chicken to one half of the tortilla.
- Fold the tortilla in half and toast for two minutes per side until golden and melted.
