Easy Chicken Taquitos

Ingredients
  

  • 2 cups cooked shredded chicken Rotisserie chicken works great
  • 4 oz cream cheese Softened to room temperature
  • cup salsa Red or green, to taste
  • 1 cup shredded cheddar cheese Freshly grated melts best
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 12 small flour or corn tortillas Warmed before rolling
  • 1 tablespoon cooking oil spray For crisping the shells

  • 1 Baking sheet For baking the taquitos
  • 1 Mixing Bowl To combine the filling

Method
 

  1. Preheat the oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
  2. Combine the shredded chicken, softened cream cheese, salsa, cheddar cheese, garlic powder, and cumin in a large mixing bowl.

  3. Warm the tortillas in the microwave for thirty seconds wrapped in a damp paper towel to make them pliable.
  4. Place two tablespoons of the chicken mixture onto the lower third of each tortilla and roll it up tightly.

  5. Place the rolled tortillas seam-side down on the prepared baking sheet and lightly spray the tops with cooking oil.

  6. Bake for fifteen to twenty minutes until the edges are golden brown and crispy.
