Method
 

  1. Chop the chocolate bars into fine, uniform pieces.

  2. Heat the heavy whipping cream in a small saucepan over medium heat until it just begins to simmer around the edges.

  3. Remove the saucepan from the heat immediately and add the chopped chocolate. Let it sit undisturbed for 2 minutes.
  4. Whisk the mixture gently from the center outward until it is completely smooth and glossy.
  5. Stir in the vanilla extract and a pinch of sea salt, then transfer immediately to a fondue pot or serving bowl.
