Method
- Preheat your oven to 350 degrees Fahrenheit and line two large baking sheets with high-quality parchment paper.
- Whisk the slightly cooled melted butter and granulated sugar together in a large mixing bowl until the mixture looks like wet sand.
- Add the whole egg, the extra egg yolk, and the vanilla extract, stirring vigorously for one minute until glossy.
- Combine the all-purpose flour, baking soda, baking powder, and kosher salt in a separate bowl to distribute the leaveners.
- Fold the dry flour mixture into the wet ingredients using a sturdy spatula until just combined and no white streaks remain.
- Scoop the dough into two-tablespoon portions, roll into balls, and toss in a bowl of granulated sugar until fully coated.
- Place onto the prepared baking sheets and bake for exactly 10 to 11 minutes until the edges look set but centers remain soft.

Notes
Store covered in an airtight container at room temperature for up to 5 days; adding a small piece of bread keeps them perfectly soft. Try adding a dash of almond extract for a bakery-style variation.
