  • 1 cup commercial creamy peanut butter Do not use natural, oil-separated peanut butter
  • ¾ cup granulated sugar Creates crispy edges
  • 1 large egg Room temperature preferred
  • 1 teaspoon vanilla extract Enhances the roasted flavor
  • ½ teaspoon baking soda Provides slight lift and spread

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. Add the peanut butter, sugar, egg, vanilla extract, and baking soda into a large bowl, stirring vigorously until a thick dough forms.

  3. Scoop one-inch portions of dough, roll them into balls, place on the sheet, and gently press a crisscross pattern into each with a fork.

  5. Let the cookies cool on the hot baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
