Ingredients
  

  • 4 fresh freestone peaches Halved and pitted
  • 1 tablespoon neutral oil Avocado or canola oil
  • ½ cup mascarpone cheese For topping
  • 2 tablespoons honey For drizzling
  • ¼ cup toasted pecans Roughly chopped

Equipment

  • 1 grill Gas or charcoal
  • 1 grill brush To clean grates
  • 1 Tongs For flipping fruit
  • 1 Pastry brush To apply oil

Method
 

  1. Preheat the grill to medium-high and clean the grates thoroughly with a brush.
  2. Brush the cut sides of the halved fruit lightly with neutral oil.

  3. Place the halves flesh-side down on the hot grates and cook undisturbed for four minutes.

  4. Flip the halves using tongs and grill for one more minute to warm the skins.

  5. Transfer to a platter and top immediately with mascarpone, honey, and pecans.

Notes

Choose freestone varieties so the pit removes easily without tearing the flesh. Ensure your grates are very clean before cooking to prevent sticking.
