Ingredients

Method
 

  1. Combine water, butter, sugar, and salt in a saucepan over medium heat until boiling.
  2. Reduce heat to low, add flour all at once, and stir vigorously until a smooth ball forms.

  3. Transfer dough to a bowl, cool for 5 minutes, then beat in the eggs one at a time until glossy.
  4. Transfer the dough to a sturdy piping bag fitted with a large star tip.

  5. Heat oil to 350 degrees Fahrenheit and pipe 6-inch lengths of dough into the pot, cutting with scissors.
  6. Fry for about 4 to 5 minutes, turning occasionally, until deep golden brown all over.

  7. Remove from oil, drain briefly, and toss immediately in the cinnamon sugar mixture.

Notes

Make sure your oil stays at a consistent 350 degrees Fahrenheit. If the oil is too hot, the outside will burn before the inside cooks through.
