- Place the cold ground pork, sage, salt, pepper, and brown sugar into a large mixing bowl. Gently fold the spices into the meat with your hands until just combined.
- Divide the mixture into six equal portions and roll them into loose balls. Flatten each ball to half an inch thick and press a small indent in the center.
- Heat oil in a skillet over medium heat. Sear the meat for three to four minutes per side until golden brown and fully cooked through.
