- Preheat the oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
- Beat the softened butter, creamy peanut butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.
- Mix in the egg and vanilla extract until fully incorporated and the batter looks smooth.
- Whisk the flour, baking soda, and salt together, then gently mix into the wet ingredients until just combined.
- Scoop the dough into one-inch balls and roll each ball in extra granulated sugar to coat completely.
- Place on the baking sheet and press a fork down gently on top to create a criss-cross pattern.
