Ingredients
  

  • 1 pound ground breakfast sausage Mild or spicy depending on preference
  • 1 loaf crusty French bread Cut into bite-sized cubes, preferably day-old
  • 8 large eggs Room temperature
  • 2 cups whole milk Creates a tender interior
  • ½ cup heavy cream Adds luxurious richness
  • 1 ½ cups sharp cheddar cheese Freshly grated
  • 1 cup Gruyere cheese Freshly grated for best melting
  • 2 cups fresh spinach Roughly chopped
  • 1 teaspoon dry mustard powder Enhances the cheese flavor
  • ½ teaspoon salt Adjust to taste
  • ¼ teaspoon black pepper Freshly cracked

Method
 

  1. Brown the sausage in a large skillet over medium heat until fully cooked and no pink remains.

  2. Whisk the eggs, milk, heavy cream, mustard powder, salt, and pepper in a large bowl until smooth.

  3. Arrange half of the bread cubes in a greased 9x13 baking dish, then top with half the sausage, spinach, and cheese.
  4. Repeat the layers once more, then slowly pour the egg mixture evenly over the entire dish.

  5. Cover tightly and refrigerate for at least 4 hours, or overnight, to allow the bread to soak.
  6. Bake uncovered at 350°F (175°C) for 50-55 minutes until the center is set and golden brown.
