- Wash, hull, and dice the fresh strawberries, then lightly mash a small portion of them.
- Toss the berries with sugar in a bowl and let sit for 10 minutes to release juices.
- Spoon a layer of the strawberry syrup and fruit into the bottom of two chilled glasses.
- Add two large scoops of vanilla bean ice cream to each glass, pressing down slightly.
- Top with remaining berries, whipped cream, sprinkles, and chopped peanuts, then serve immediately.

Store leftover strawberry sauce covered in the refrigerator for up to 3 days. Assemble the sundae right before serving to prevent melting.
