  • 1 lb boneless skinless chicken thighs Cut into bite-sized pieces
  • ½ cup low-sodium soy sauce Substitute tamari for gluten-free
  • ¼ cup mirin Japanese sweet cooking wine
  • 3 tablespoons brown sugar Packed
  • 2 cloves garlic Finely grated
  • 1 tablespoon fresh ginger Finely grated
  • 1 head broccoli Cut into small florets
  • 1 red bell pepper Thinly sliced
  • 1 tablespoon cooking oil Neutral oil like canola or vegetable
  • 3 cups cooked white rice For serving
  • 1 tablespoon sesame seeds Toasted, for garnish
  • 2 green onions Thinly sliced, for garnish

Method
 

  1. Whisk together the soy sauce, mirin, brown sugar, garlic, and ginger in a small bowl until the sugar dissolves.

  2. Pat the chicken pieces dry with paper towels to ensure a proper sear.
  3. Heat oil in a large skillet over medium-high heat, add the chicken, and cook undisturbed until golden brown.

  4. Add the broccoli florets and sliced bell pepper to the skillet and toss gently for three minutes until tender-crisp.

  5. Pour the sauce mixture over the chicken and vegetables, letting it bubble until it thickens into a glossy glaze.
  6. Serve immediately over warm rice, garnished with toasted sesame seeds and sliced green onions.
