- Preheat Belgian waffle maker according to manufacturer instructions for 5 minutes on high, spray with cooking spray or brush with melted butter.
- Whisk together flour, sugar, baking powder, baking soda, and salt in large bowl.
- Separate egg whites from yolks, place whites in clean bowl and beat with electric mixer on high speed until stiff peaks form, about 3 to 4 minutes.
- Whisk egg yolks with buttermilk, melted butter, and vanilla until smooth, pour into dry ingredients and stir just until combined with lumps remaining.
- Gently fold whipped egg whites into batter in three additions using rubber spatula with folding motion, some white streaks are fine.
- Pour about ¾ cup batter onto center of preheated waffle maker, close lid gently, cook 3 to 5 minutes until steam stops and waffle is golden brown.
- Remove carefully with fork and serve immediately while hot and crispy with desired toppings.
