Ingredients
  

  • ½ cup unsalted butter Softened to room temperature
  • ¾ cup granulated sugar
  • 1 large egg Room temperature
  • 1 teaspoon vanilla extract Pure extract preferred
  • 1 ½ cups all-purpose flour Spoon and leveled
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups powdered sugar For the frosting
  • 2 tablespoons milk Adjust as needed for the frosting
  • 1 drop pink food coloring
  • 2 tablespoons rainbow sprinkles Optional, for topping

Equipment

Method
 

  1. Place the softened butter and granulated sugar into a large mixing bowl and beat on medium speed until pale and fluffy.

  2. Add the egg and vanilla extract to the mixture, beating on low speed until completely combined and smooth.
  3. Whisk the flour, baking powder, and salt together, then gradually pour into the wet mixture until a soft dough forms.

  4. Roll portions of dough into balls, press them slightly on a parchment lined baking sheet, and bake at 350 degrees Fahrenheit until edges are set.

  5. Whisk the powdered sugar, milk, and pink food coloring together until the icing is completely smooth and spreadable.
  6. Spread the pink frosting over the completely cooled cookies and top with rainbow sprinkles before the icing sets.
