  • 1 lb large raw shrimp, peeled and deveined Thawed completely if using frozen
  • 4 tablespoon unsalted butter Divided use, kept very cold
  • 1 tablespoon olive oil Used for high heat searing
  • 4 cloves fresh garlic Minced finely
  • ¼ cup fresh parsley Chopped well for garnish

Method
 

  1. Pat the seafood completely dry using paper towels to ensure a proper sear.

  2. Melt one tablespoon of fat with the oil in a large skillet over medium-high heat.
  3. Place the pieces in a single layer and cook undisturbed for exactly two minutes per side.
  4. Reduce the heat to low, stir in the minced aromatics, and swirl in the remaining cold fat until a creamy glaze forms.
