- Cut sirloin into 1-inch cubes and pat dry with paper towels, quarter baby potatoes into bite-sized pieces.
- Heat 2 tablespoons olive oil in large cast iron skillet over medium-high heat, add potatoes and season with salt, pepper, and Italian seasoning, cook 12 to 15 minutes stirring occasionally until golden and fork-tender.
- Remove potatoes to plate, add remaining tablespoon olive oil to skillet over high heat, season steak cubes with salt, pepper, garlic powder, and smoked paprika.
- Add steak to smoking hot skillet in single layer, sear undisturbed 2 minutes until deep brown crust forms, flip and sear other side 1 to 2 minutes for medium-rare.
- Remove steak to plate with potatoes immediately, reduce heat to medium and add butter to skillet, once melted add minced garlic and cook 30 seconds until fragrant.
- Return steak and potatoes to skillet with garlic butter, add parsley, thyme, and red pepper flakes if using, toss to coat and serve immediately.

Notes
Use high heat for proper searing. Don't crowd pan or steak will steam. Cook potatoes first since they take longer. Add garlic after removing steak to prevent burning. Serve immediately for best texture.
