Ingredients
  

  • 1.5 lbs ground beef (85/15 lean) Browned and drained
  • 1 can refrigerated biscuit dough (16 oz) Grand or homestyle variety
  • 1 large onion, chopped Yellow or white
  • 1 cup bell peppers, diced Green and red mix
  • 1 packet taco seasoning (1 oz) Mild or spicy to taste
  • ¾ cup water For simmering meat
  • ½ cup sour cream Full fat for best texture
  • ½ cup mayonnaise Real mayo, not whip
  • 2 cups cheddar cheese, shredded Divided use
  • green onions Sliced for garnish

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. Brown the ground beef, onions, and peppers in a large skillet over medium-high heat until meat is cooked through, then drain grease.
  3. Stir in water and taco seasoning, simmering for 3–4 minutes until the liquid thickens.

  4. Whisk together sour cream, mayonnaise, and 1 cup of cheddar cheese in a medium bowl until smooth.

  5. Press the biscuit dough firmly into the bottom of the prepared baking dish to form a sealed crust.
  6. Spread the meat mixture over the dough, followed by the creamy sauce layer, smoothing gently.
  7. Bake for 25–30 minutes until the biscuit edges are golden brown.
  8. Top with remaining cheese and bake 5 more minutes until melted; garnish with green onions before serving.

Notes

Leftovers reheat well in the oven at 350°F for 20 minutes. For a spicier version, add diced jalapeños to the meat mixture.
