- Combine the softened cream cheese with the diced jalapeños and a pinch of salt. Mix the blend vigorously until it looks perfectly smooth and spreadable.
- Fry the thick strips in a large skillet over medium heat. Watch for the edges to curl and turn deeply golden brown before draining them on a paper towel.
- Form the ground beef into wide discs and season them generously with salt and black pepper. Place them onto a hot grill or cast iron pan, watching for a dark crust to form on the bottom.
- Flip the burgers and immediately lay a slice of sharp cheddar on top of each patty. Let the heat soften the cheese until it drapes over the edges of the beef.
- Toast the sesame buns lightly, then place the cheesy patty on the bottom half. Smear a generous spoonful of the jalapeño mixture over the meat, followed by the crispy bacon and red onion slices.
