- Plug in mini waffle maker and preheat for full 5 minutes until very hot.
- Beat egg in small bowl until smooth, add shredded mozzarella cheese, cheddar if using, baking powder, and salt, mix until combined.
- Spray preheated waffle maker with cooking spray, pour half the batter into center, close lid gently, cook 3 to 4 minutes until golden brown and steam stops.
- Use silicone spatula or fork to carefully lift cooked chaffle from waffle maker, place on wire rack and let cool 1 minute to crisp.
- Repeat with remaining batter to make second chaffle, cook 3 to 4 minutes.
- Serve hot with desired toppings: butter and sugar-free syrup for sweet, or avocado and eggs for savory.

Preheat waffle maker fully 5 minutes. Use 1 egg to ½ cup cheese ratio. Don't open too early or chaffle will stick. Let cool 1 minute to crisp. Freeze extras for meal prep. Works sweet or savory.
