Ingredients
  

  • 1 large egg
  • ½ cup shredded mozzarella cheese About 2 ounces
  • ¼ cup shredded cheddar cheese Optional for flavor
  • ¼ teaspoon baking powder Optional for fluffier texture
  • 1 pinch salt
  • cooking spray For waffle maker

Equipment

  • 1 mini waffle maker Essential for chaffles
  • 1 Small bowl For mixing
  • 1 Fork For beating egg
  • 1 Wire cooling rack For crisping
  • 1 Silicone spatula For removing

Method
 

  1. Plug in mini waffle maker and preheat for full 5 minutes until very hot.
  2. Beat egg in small bowl until smooth, add shredded mozzarella cheese, cheddar if using, baking powder, and salt, mix until combined.
  3. Spray preheated waffle maker with cooking spray, pour half the batter into center, close lid gently, cook 3 to 4 minutes until golden brown and steam stops.
  4. Use silicone spatula or fork to carefully lift cooked chaffle from waffle maker, place on wire rack and let cool 1 minute to crisp.
  5. Repeat with remaining batter to make second chaffle, cook 3 to 4 minutes.
  6. Serve hot with desired toppings: butter and sugar-free syrup for sweet, or avocado and eggs for savory.

Notes

Preheat waffle maker fully 5 minutes. Use 1 egg to ½ cup cheese ratio. Don't open too early or chaffle will stick. Let cool 1 minute to crisp. Freeze extras for meal prep. Works sweet or savory.
