Ingredients
  

  • 1 cup granulated sugar Divided for crust and filling
  • 3 cups all-purpose flour Spoon and leveled
  • 1 cup unsalted butter Cold and cubed
  • 4 cups fresh blueberries Washed and dried
  • 1 tablespoon lemon zest Freshly grated
  • 2 tablespoons lemon juice Freshly squeezed
  • 4 tablespoons cornstarch For thickening the fruit

Method
 

  1. Preheat your oven to 375 degrees F and line an 8x8 baking pan with parchment paper.
  2. Combine the flour, half the sugar, and cold cubed butter in a bowl, cutting until it resembles coarse sand.
  3. Press two-thirds of the dough firmly into the bottom of the prepared pan.

  4. Toss the blueberries with the remaining sugar, cornstarch, lemon juice, and zest until coated.

  5. Pour the berry mixture evenly over the crust, then crumble the remaining dough over the top.
