  • ½ cup short-grain white rice Arborio rice works best
  • 4 cups whole milk Do not use skim milk
  • cup granulated sugar Adjust to your taste preference
  • ¼ teaspoon kosher salt Balances the sweetness
  • 1 teaspoon pure vanilla extract Add off the heat
  • cup raisins Optional but highly recommended
  • ½ teaspoon ground cinnamon For garnish

Method
 

  1. Place the short-grain rice in a fine-mesh strainer and rinse briefly under cold water to remove surface debris.

  2. Combine the rinsed rice, whole milk, sugar, and salt in a heavy-bottomed saucepan over medium heat.

  3. Stir frequently until the milk begins to steam and tiny bubbles form around the edges of the pot.
  4. Reduce the heat to the lowest possible setting and simmer gently for 30 to 35 minutes, stirring every few minutes to prevent sticking, until the rice is tender and the mixture has thickened.

  5. Remove the pot from the heat and stir in the vanilla extract and raisins.
  6. Transfer to serving bowls, sprinkle with ground cinnamon, and garnish with cinnamon sticks before serving warm.

Notes
