  • 2 medium zucchini Sliced into thick rounds
  • 1 medium red onion Cut into wedges

  • 3 cloves garlic, minced Fresh is best for flavor
  • 1 tablespoon smoked paprika Adds a mild, smoky heat
  • 1 teaspoon dried oregano For herbal notes
  • ½ teaspoon salt Adjust to taste

  • 2 tablespoons fresh parsley, chopped For garnish

Method
 

  1. Heat your oven or grill to medium-high heat and cut four large sheets of heavy-duty aluminum foil.

  2. Place the shrimp, zucchini slices, and red onion into a large mixing bowl.

  3. Pour the melted garlic butter and seasoning blend over the top, tossing everything until completely coated.
  4. Divide the mixture evenly among the center of the four foil sheets in a single layer.

  5. Fold the long sides of the foil together and crimp tightly, then roll up the short ends to trap the steam.
  6. Cook in the oven or on the grill for 12 to 15 minutes until the shrimp turn opaque and pink.
  7. Carefully open the packets to release steam, garnish with fresh parsley, and serve immediately.
