- Place the shrimp, zucchini slices, and red onion into a large mixing bowl.
- Pour the melted garlic butter and seasoning blend over the top, tossing everything until completely coated.
- Divide the mixture evenly among the center of the four foil sheets in a single layer.
- Fold the long sides of the foil together and crimp tightly, then roll up the short ends to trap the steam.
- Cook in the oven or on the grill for 12 to 15 minutes until the shrimp turn opaque and pink.
- Carefully open the packets to release steam, garnish with fresh parsley, and serve immediately.
