Incredibly soft, bakery-style frosted sugar cookies that require no chilling. Thick, chewy, and topped with a generous layer of sweet vanilla frosting and rainbow sprinkles.

Ingredients
  

  • 3 cups all-purpose flour Spoon and leveled
  • 2 tablespoons cornstarch Keeps the cookies soft
  • 1 teaspoon baking powder Ensure it is fresh
  • 1 cup unsalted butter Softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg Room temperature
  • 2 teaspoons vanilla extract Pure vanilla is best

Method
 

  1. Whisk the flour, cornstarch, and baking powder together in a medium bowl.
  2. Beat the softened butter and granulated sugar in a large bowl until pale and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and beat until well combined.

  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  5. Roll the dough to one-quarter inch thick and cut out shapes with a round cookie cutter.

  6. Bake at 350°F for 8 to 10 minutes, removing before the edges turn brown.

  7. Frost completely cooled cookies with buttercream and top immediately with rainbow sprinkles.
