- Whisk the flour, cornstarch, and baking powder together in a medium bowl.
- Beat the softened butter and granulated sugar in a large bowl until pale and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Roll the dough to one-quarter inch thick and cut out shapes with a round cookie cutter.
- Bake at 350°F for 8 to 10 minutes, removing before the edges turn brown.
- Frost completely cooled cookies with buttercream and top immediately with rainbow sprinkles.
