Method
- Boil 4 cups of filtered water and pour over the black tea bags in a heat-safe pitcher.
- Let the tea steep for exactly 5 minutes, then remove the bags and allow the tea to cool to room temperature.
- Combine the sliced strawberries, honey, and remaining 2 cups of water in a medium saucepan over medium heat.
- Cook for 10-15 minutes until the berries are very soft and the liquid is deep red.
- Pour the hot mixture through a fine-mesh strainer into a bowl, pressing gently to extract the syrup.
- Stir the cooled strawberry syrup into the room-temperature tea and refrigerate for at least 2 hours.
- Serve in tall glasses filled with ice, garnished with a fresh mint sprig.

Store covered in the refrigerator for up to 4 days. Stir well before serving as the fruit syrup may settle at the bottom of the pitcher.
