Taco Dorito Casserole

Ingredients
  

  • 2 pounds ground beef Or ground turkey
  • 1 packet taco seasoning About 1 ounce
  • 1 bag nacho cheese Doritos, crushed Family size 14-15 oz
  • 3 cups shredded cheddar cheese Divided
  • 1 cup shredded Mexican blend cheese
  • 1 cup salsa Your favorite kind
  • 1 cup sour cream Divided
  • 1 can black beans, drained and rinsed 15 oz can
  • 1 can corn, drained 15 oz can
  • 1 can diced tomatoes with green chiles (Rotel) 10 oz can, drained
  • shredded lettuce for topping

  • sliced green onions for topping

Equipment

  • 1 large skillet For browning beef
  • 1 9x13 baking dish For casserole
  • 1 Wooden Spoon For breaking up beef
  • 1 cutting board For toppings
  • 1 knife For chopping

Method
 

  1. Cook ground beef in large skillet over medium high heat for 8 to 10 minutes, breaking it up until no pink remains, then drain excess grease completely.
  2. Add taco seasoning and splash of water to drained beef, simmer 2 to 3 minutes, then stir in Rotel tomatoes, black beans, and corn.
  3. Spray 9x13 inch baking dish with cooking spray, spread one third of crushed Doritos on bottom, top with half the beef mixture spread evenly.
  4. Dollop half the sour cream over beef and spread gently, sprinkle with half the shredded cheese, then add another layer of Doritos.
  5. Add remaining beef mixture, remaining sour cream, remaining cheese, then top with remaining crushed Doritos spread loosely without pressing down.
  6. Bake at 350°F for 20 to 25 minutes until cheese is melted and bubbly and edges are browning, then let rest 5 minutes.
  7. Top with shredded lettuce, diced tomatoes, green onions, and extra sour cream before serving.

Notes

Keep most Doritos on top for crunch. Drain beef thoroughly to prevent greasy casserole. Let rest 5 minutes before serving for best slicing. Top layer of Doritos stays crunchy while bottom softens. Add fresh toppings after baking.
