- Cook ground beef in large skillet over medium high heat for 8 to 10 minutes, breaking it up until no pink remains, then drain excess grease completely.
- Add taco seasoning and splash of water to drained beef, simmer 2 to 3 minutes, then stir in Rotel tomatoes, black beans, and corn.
- Spray 9x13 inch baking dish with cooking spray, spread one third of crushed Doritos on bottom, top with half the beef mixture spread evenly.
- Dollop half the sour cream over beef and spread gently, sprinkle with half the shredded cheese, then add another layer of Doritos.
- Add remaining beef mixture, remaining sour cream, remaining cheese, then top with remaining crushed Doritos spread loosely without pressing down.
- Bake at 350°F for 20 to 25 minutes until cheese is melted and bubbly and edges are browning, then let rest 5 minutes.
- Top with shredded lettuce, diced tomatoes, green onions, and extra sour cream before serving.
