- Pound the chicken breasts to an even thickness using a meat mallet or rolling pin.
- Mix garlic powder, onion powder, paprika, salt, and pepper, then rub generously over the chicken.
- Heat 1 tablespoon oil and 1 tablespoon butter in a cast-iron skillet over medium-high heat.
- Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F).
- Remove chicken from the pan and set aside on a plate to rest.
- Add remaining butter and oil to the pan, then sauté mushrooms and onions until caramelized.
- Return chicken to the pan, top with the veggie mixture and shredded cheese.
- Cover and heat for 1-2 minutes until the cheese is completely melted and bubbly.

Notes
For the best melt, shred a block of Monterey Jack cheese yourself rather than using pre-shredded bags. Serve immediately to keep the cheese gooey and the chicken juicy.
