Ingredients
  

  • 4 boneless, skinless chicken breasts Pounded to even thickness
  • 2 tablespoon olive oil Divided use
  • 2 tablespoon unsalted butter Divided use
  • 8 oz Cremini mushrooms, sliced Or white button mushrooms
  • 1 medium yellow onion, sliced Optional but recommended
  • 1 cup Monterey Jack cheese, shredded Freshly shredded melts best
  • 1 teaspoon garlic powder For seasoning
  • 1 teaspoon onion powder For seasoning
  • 1 teaspoon paprika For color and flavor
  • 1 teaspoon salt Adjust to taste
  • ½ teaspoon black pepper Freshly ground

Equipment

  • 1 Cast iron skillet Essential for searing
  • 1 Meat mallet For pounding chicken
  • 1 Tongs For flipping meat
  • 1 Cheese grater For fresh cheese

Method
 

  1. Pound the chicken breasts to an even thickness using a meat mallet or rolling pin.

  2. Mix garlic powder, onion powder, paprika, salt, and pepper, then rub generously over the chicken.

  3. Heat 1 tablespoon oil and 1 tablespoon butter in a cast-iron skillet over medium-high heat.
  4. Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F).
  5. Remove chicken from the pan and set aside on a plate to rest.
  6. Add remaining butter and oil to the pan, then sauté mushrooms and onions until caramelized.
  7. Return chicken to the pan, top with the veggie mixture and shredded cheese.
  8. Cover and heat for 1-2 minutes until the cheese is completely melted and bubbly.

Notes

For the best melt, shred a block of Monterey Jack cheese yourself rather than using pre-shredded bags. Serve immediately to keep the cheese gooey and the chicken juicy.
