Ingredients
  

  • 2 cups fresh strawberries, diced Choose ripe, red berries
  • 2 tablespoons granulated sugar To macerate the fruit
  • 1 cup heavy whipping cream Very cold
  • 1 teaspoon vanilla extract For flavor
  • 1 cup granola Use your favorite crunchy variety

Equipment

  • 2 Mixing bowls For berries and cream
  • 1 hand mixer For whipping cream
  • 4 Serving glasses To build the parfaits

Method
 

  1. Toss the diced strawberries with sugar in a bowl and let sit for 10 minutes until juicy.

  2. Whip the cold heavy cream and vanilla extract in a chilled bowl until soft peaks form.

  3. Spoon a layer of whipped cream into the bottom of four serving glasses.
  4. Add a layer of the juicy strawberries followed by a generous sprinkle of granola.

  5. Repeat the layers once more and garnish with a whole berry before serving immediately.
