Ingredients
  

  • 1 medium zucchini, cut into 1-inch rounds Keep thickness uniform

  • ½ teaspoon kosher salt To taste

Equipment

  • 6 wooden skewers Soaked in water

Method
 

  1. Place wooden sticks in a shallow pan of water for thirty minutes to prevent burning.

  2. Cut the squash, peppers, and onions into one-inch pieces to match the mushrooms.
  3. Combine the produce with olive oil, garlic powder, Italian seasoning, salt, and pepper in a large bowl until fully coated.

  4. Slide the coated pieces onto the sticks, alternating the colors and leaving a small gap between pieces.

Notes
