Ingredients
  

  • 2 slices sourdough bread Thick slices work best
  • 2 slices American cheese Provides the best melt
  • ¼ cup cheddar cheese, freshly grated Adds sharp flavor
  • 1 tablespoon mayonnaise For the crisp exterior

Equipment

  • 1 Skillet Cast iron or nonstick
  • 1 Spatula For flipping
  • 1 Cheese grater For fresh cheddar

Method
 

  1. Spread an even layer of mayonnaise on one side of each bread slice.
  2. Layer the American and cheddar cheeses evenly on the dry side of the bottom slice, then top with the second slice of bread, mayonnaise side out.

  3. Place a skillet over medium-low heat and let it warm completely.

  4. Transfer the sandwich to the pan and cook undisturbed until the bottom is golden brown.

  5. Turn the sandwich carefully with a spatula and cook until the second side is golden and the cheese is fully melted.

Notes

Cook low and slow. Rushing the process over high heat will burn the bread before the cheese melts fully.
