Ingredients
  

  • 1.5 lbs ground chuck (80/20) Kept cold
  • 4 brioche buns Lightly toasted
  • 8 slices thick-cut bacon Smoked
  • 8 slices sharp cheddar cheese For maximum flavor
  • ½ cup BBQ sauce Thick and smoky variety
  • 1 large yellow onion Thinly sliced
  • 1 teaspoon salt To taste
  • 1 teaspoon black pepper Freshly ground

Method
 

  1. Cook the bacon slices in a large skillet over medium heat until crispy, then remove to a plate.

  2. Sauté the thinly sliced onions in the remaining bacon fat until deeply caramelized.
  3. Divide the ground beef into 8 equal portions, form into loose balls, and press flat into a hot skillet.

  4. Sear the patties for three minutes until a crust forms, flip, and top with cheddar cheese.
