- Preheat your oven to 325 degrees Fahrenheit and line a large baking sheet with parchment paper.
- Stir the rolled oats, sliced almonds, and kosher salt together in a large mixing bowl.
- Pour the melted coconut oil, maple syrup, and vanilla extract over the dry mixture and toss thoroughly to coat.
- Transfer the sticky mixture to the prepared baking sheet and press it down firmly into a compact, even layer.
- Bake for 22 to 25 minutes until golden brown, then let cool completely on the pan before breaking into clusters.

Store the completely cooled granola in an airtight glass jar at room temperature for up to two weeks. Do not stir the granola while it bakes or cools, or you will break the clusters.
