- Place the fresh mint leaves and simple syrup in the bottom of a glass or silver cup. Press gently with a muddler to release the mint oils without tearing the leaves.
- Fill the cup completely to the top with finely crushed ice, allowing it to mound slightly over the rim.
- Pour the chilled ginger ale slowly over the ice. Stir gently from the bottom up to mix the syrup evenly.
- Slap a fresh mint sprig against your hand to release the aroma, nestle it into the ice, and serve immediately.
