Ingredients
  

  • 8 leaves fresh mint Plus extra sprigs for garnish
  • ½ ounce simple syrup Adjust to taste
  • 4 ounces ginger ale Chilled
  • 2 cups crushed ice Must be finely crushed

Equipment

  • 1 wooden muddler For bruising the mint gently
  • 1 julep cup or highball glass Silver cups frost best
  • 1 Bar spoon For stirring

Method
 

  1. Place the fresh mint leaves and simple syrup in the bottom of a glass or silver cup. Press gently with a muddler to release the mint oils without tearing the leaves.

  2. Fill the cup completely to the top with finely crushed ice, allowing it to mound slightly over the rim.

  3. Pour the chilled ginger ale slowly over the ice. Stir gently from the bottom up to mix the syrup evenly.

  4. Slap a fresh mint sprig against your hand to release the aroma, nestle it into the ice, and serve immediately.
