Ingredients
  

  • 1 cup fresh seedless watermelon, cubed Yields about 3 ounces of strained juice
  • 2 ounces white rum Light rum works best
  • 1 ounce fresh lime juice Squeezed right before mixing
  • 0.5 ounces simple syrup Adjust based on fruit sweetness
  • 6 leaves fresh mint Plus extra for garnish
  • 2 ounces club soda Chilled
  • ice cubes For shaking and serving

Equipment

  • 1 Blender To puree the fruit
  • 1 Fine mesh strainer To remove pulp
  • 1 Cocktail shaker For mixing
  • 1 muddler To press mint

Method
 

  1. Blend the fresh fruit cubes on high speed until completely liquid.

  2. Strain the puree through a fine mesh strainer to remove all pulp.
  3. Press the mint leaves and lime juice gently in a shaker tin to release oils.

  4. Add the strained juice, rum, syrup, and ice, then shake vigorously.

  5. Strain into an ice-filled glass, top with club soda, and garnish.

Notes
